A Warm Caramelised Peach & Herb Salad

Ingredients:

  • 2 fresh peaches, firm and ripe, cut into wedges

  • 15 g of unsalted butter

  • 1 tsp of honey

  • 1 tsp of fig vinegar (or white balsamic vinegar)

  • Fresh herbs - a few small basil leaves, little thyme (leaves only), 2-3 small tarragon leaves (torn)

  • Baby arugula (rocket) - small handful, raw (and washed), not cooked

  • Sea salt (to taste)

  • Freshly cracked black pepper (to taste)

Steps:

  • Melt butter in a skillet or pot over medium heat until foaming

  • Add peach wedges and sear 2-3 minutes per side until lightly caramelised

  • Drizzle with honey, let bubble for 20 - 30 seconds

  • Deglaze with fig vinegar, swirling to coat

  • Remove from heat and just before serving, toss peaches gently with basil, thyme leaves, tarragon and baby arugula (all not cooked)

  • Season with sea salt and black pepper

  • Serve as a side with some pancakes, or a yummy sandwich :)
