Homemade Strawberry Jam

I went strawberry picking last year on a really lovely summer day, and here’s a quick strawberry jam recipe I made with the strawberries I picked :) it has been a while I made it, so this is more of an approximate but it should yield similar results.

Ingredients:

  • 1 kg of strawberries

  • 750g of jam sugar

  • Juice of 1 lemon

  • Small knob of butter (optional)

Steps:

  • Wash and remove the steps of the strawberries.

  • Cut strawberries in half or quarters (if not using a blender afterwards, you may want to cut into even smaller pieces)

  • Combine all ingredients in a medium pot or saucepan

  • Taste the strawberry mixture and add more jam sugar or lemon juice as needed

  • Bring the strawberry mixture to boil and cook on medium heat until the strawberries begin to break down and release their juice. Stir occasionally

  • Continue to simmer over low heat until jam jells on a frozen plate stirring frequently as it thickens.

  • Pour into a large bowl or baking dish, cover with plastic wrap with a few holes poked in for steam, and then cool completely. Once room temperature, pour into clean and sterilised mason jars or airtight containers, and store in the fridge.

  • Serve with toasts, pancakes, oatmeal, and so forth! Enjoy :)

It tasted delicious paired with some homemade oat and banana pancakes, and topped with some toasted walnuts :)
