Homemade Strawberry Jam
I went strawberry picking last year on a really lovely summer day, and here’s a quick strawberry jam recipe I made with the strawberries I picked :) it has been a while I made it, so this is more of an approximate but it should yield similar results.
Ingredients:
1 kg of strawberries
750g of jam sugar
Juice of 1 lemon
Small knob of butter (optional)
Steps:
Wash and remove the steps of the strawberries.
Cut strawberries in half or quarters (if not using a blender afterwards, you may want to cut into even smaller pieces)
Combine all ingredients in a medium pot or saucepan
Taste the strawberry mixture and add more jam sugar or lemon juice as needed
Bring the strawberry mixture to boil and cook on medium heat until the strawberries begin to break down and release their juice. Stir occasionally
Continue to simmer over low heat until jam jells on a frozen plate stirring frequently as it thickens.
Pour into a large bowl or baking dish, cover with plastic wrap with a few holes poked in for steam, and then cool completely. Once room temperature, pour into clean and sterilised mason jars or airtight containers, and store in the fridge.
Serve with toasts, pancakes, oatmeal, and so forth! Enjoy :)
It tasted delicious paired with some homemade oat and banana pancakes, and topped with some toasted walnuts :)
