Turkey Tagliatelle Bolognese
A very yummy turkey tagliatelle bolognese recipe :)
You’ll Need (4 servings)
• 2 tbsp olive oil
• 1 medium onion, finely chopped
• 1 carrot, finely diced
• 1 celery stick, finely diced
• 2 garlic cloves, minced
• 500g minced turkey
• 1 tbsp tomato paste
• 200g chopped tomatoes or passata
• 200ml (¾ cup) chicken stock or (200 ml water + 3 (or to taste) Bouillon cubes)
• 60ml (¼ cup) milk or cream (optional, but helps mellow acidity and adds richness)
• 1 tsp dried oregano
• 1 tsp thyme or rosemary
• (optional) 1 bay leaf
• Salt & black pepper, to taste
• 300g tagliatelle
• Fresh parsley or basil, for garnish
• Parmesan or Pecorino cheese, to serve
Steps
1. Heat oil in a large pan, and then sauté onion, carrot, and celery for 7 minutes until soft
2. Stir in garlic for 1 minute
3. Add minced turkey, season lightly, and cook until browned
4. Tomato paste: Stir in and cook for 2 minutes to reduce sharpness
5. Add chopped tomatoes, stock (or water and bouillon cubes), herbs, bay leaf, salt, and pepper. Simmer gently for 20–25 minutes, adding a splash more stock if needed
6. Stir in milk or cream for a smoother, less acidic sauce
7. Cook tagliatelle al dente, then toss it with the sauce until well coated
8. Garnish with herbs and Parmesan and enjoy :)
