A Yoghurt, Pistachio and Pomegranate Cake

I found this lovely yoghurt, pistachio and pomegranate cake recipe a little while back that I made, with a few changes here and there to the recipe, and I just loved it. So much so, I thought I’d share it on here, so I can also come back to it as well :)

Prep + Cook time: about 1 hour

Ingredients:

  • 150 g caser sugar

  • 150 ml olive oil

  • 2 eggs lightly beaten

  • 1 teaspoon vanilla extract

  • 300 g natural yoghurt

  • 300 g plan flour

  • 2 teaspoons baking powder

  • 100 g pistachios unsalted and unshelled

Icing:

  • 225 g icing sugar

  • 100g natural yoghurt

  • 200 g pomegranate seeds

Steps:

  • Preheat your oven to 160 C, and grease an 8 inch baking pan

  • Chop up your pistachios into smaller pieces (you could also blend them in a blender or food processor if you want to grind them into fine crumbs

  • Place the sugar and oil in a large bowl and whisk until smooth, then add in your eggs, vanilla extract, then your yoghurt and mix well.

  • Then fold in your flour, baking powder and chopped (or ground) pistachios

  • Pour the mixture into your greased pan and bake it for 45 - 50 minutes or until your skewer (or fork) comes out clean.

  • Once out of the oven, ;eave your baking pan toto cool for 15 - 30 minutes and then take the cake out of the baking pan to let it completely cool down on a plate or wire rack.

  • To prepare the icing, mix the icing sugar into a bowl (you could also sift the icing sugar too before doing this but in my case I didn’t as I didn’t have a ton of time, and it came out just fine too :)) and add in your yogurt and mix well until it becomes a paste.

  • Pour the icing onto your cake, and smooth it out and around the sides (you could use a spatula for this bit) or you could just let it drip around too which I partly did :)

  • Scatter pomegranate seeds (and if you’d like, roughly chopped pistachios) on top of the cake to decorate

  • You could also add some pomegranate and chopped pistachios around the platter to decorate as well :)
