Coconut Yogurt Muffins (with no flour!)

A no- flour, and no-sugar muffin recipe :)

Yield: 8 muffins

You’ll need:

  • 2 cups of desiccated coconut

  • 1/2 cup plain greek yogurt

  • 3 large eggs

  • 1/4 cup melted butter or coconut oil (I used coconut oil here)

  • 1 tsp vanilla extract

  • 1/3 cup of honey

  • 1 tsp baking powder

  • (optional) Pinch of salt

  • 1/2 cup of raisins

  • Dash of cinnamon

  • (optional) Zest of 1/2 or 1 lemon

Steps:

  • Preheat oven to 175 C (350 F)

  • Line muffin tin with paper cases

  • In a bowl, whisk eggs, yogurt, honey, melted coconut oil (or butter), vanilla, and lemon zest until smooth

  • Stir in desiccated coconut, baking powder, and salt. Let batter sit 5 min (the coconut absorbs moisture and softens)

  • Gently fold in the raisins

  • Pour into muffin cups

  • Bake for 20 - 25 minutes, until golden on top and a toothpick comes out clean.

  • Cool before slicing - texture becomes softer as it rests
