Coconut Yogurt Muffins (with no flour!)
A no- flour, and no-sugar muffin recipe :)
Yield: 8 muffins
You’ll need:
2 cups of desiccated coconut
1/2 cup plain greek yogurt
3 large eggs
1/4 cup melted butter or coconut oil (I used coconut oil here)
1 tsp vanilla extract
1/3 cup of honey
1 tsp baking powder
(optional) Pinch of salt
1/2 cup of raisins
Dash of cinnamon
(optional) Zest of 1/2 or 1 lemon
Steps:
Preheat oven to 175 C (350 F)
Line muffin tin with paper cases
In a bowl, whisk eggs, yogurt, honey, melted coconut oil (or butter), vanilla, and lemon zest until smooth
Stir in desiccated coconut, baking powder, and salt. Let batter sit 5 min (the coconut absorbs moisture and softens)
Gently fold in the raisins
Pour into muffin cups
Bake for 20 - 25 minutes, until golden on top and a toothpick comes out clean.
Cool before slicing - texture becomes softer as it rests
