Mini Apple & Almond Crumble (Ramekin Recipe)

I went apple picking on a wonderful summer day, and here’s an apple crumble recipe made from the apples I picked :)

Ingredients:

  • 1 small apple, peeled, cored and thinly sliced

  • 1/4 tsp lemon juice (optional)

  • 1/8 tsp cinnamon

  • Pinch of nutmeg

  • 1/2 tsp maple syrup or honey (optional)

    Topping:

  • 1.5 tbsp rolled oats

  • 1 tbsp ground almonds

  • 1/2 tsp coconut oil or butter, melted

  • 1/8 tsp cinnamon

  • 1/2 tsp maple syrup or honey

  • Optional: 1 tsp chopped nuts

Steps:

  • Preheat oven to 350F (175C)

  • Toss apple slices with lemon juice, cinnamon, nutmeg, and maple syrup. Place in greased ramekin (6-8 oz / 180 - 240 ml)

  • Mix oats, ground almonds, cinnamon, coconut oil, sweetener, and optional nuts until crumbly

  • Sprinkle topping over apples

  • Bake 20-25 minutes, until apples are tender and topping is golden

  • Serve warm, optionally with a spoonful of yogurt or a spoonful of vanilla ice cream :) Enjoy :)
