Sugar Plum Clafoutis

A yummy French plum dessert recipe for late summer :)

You’ll need:

  • butter for greasing the pie pan

  • (optional) granulated sugar for dusting the dish

  • 1 and a quarter cups milk

  • 4 large eggs

  • 1/3 cup brown sugar

  • 2 teaspoons vanilla extract

  • 1/8 teaspoon salt

  • 1/2 cup all-purpose flour

  • 3-4 plums ripe but firm, pitted and sliced

Steps:

  • Preheat oven to 375 F. Butter a 9-inch pie pan

  • Add the milk, eggs, brown sugar, vanilla, salt and flour to a bowl and whisk well, until very smooth with no lumps

  • Arrange the plum slices in the bottom of the buttered pie pan, then pour batter over top

  • Bake until puffed and lightly golden, about 30 - 40 mins, then let cool for 30 mins to an hour before serving

  • Serve warm, at room temperature or cold too :)
